After a long day of play or work isn’t it wonderful to come home to a delicious meal. Even better when all you need to do is dish it up! That’s why I love crock pot meals. I always have more energy for cooking in the morning so I gather the ingredients and throw them in the crock pot, turn it on and voila!-yum!
I have been on Weight Watchers for 3 months and while doing this I discovered a site called Hungry Girl. This site posts daily newsletters with recipes, new products on the market and various nutritional information. I got the following recipe from this site. It taste like regular food, the nutritional content is excellent and for those of us who are weight watchers it is only 4points for a 1 cup serving.
Fajita Beef Stew
12 oz. beef in bite size pieces
2 Tbl. fajita seasoning mix,
1 -14.5oz can of diced chilles (not drained)
1 large russet potato (peeled and cubed)
1 large onion (diced)
2 bell peppers (any color-cut to bite size)
2 portabella mushrooms (cut to bite size)
4 cups beef broth
1 tsp. garlic (fresh minced or from a jar)
Add all of this into the crock pot, cook on high for 3-4 hours or low for 7-8 hours
After this is cooked (if you want to do this -I did not and still enjoyed the stew)
dissolve 2 Tbl of cornstarch in water and add to stew-simmer 5 min.
Serve stew in bowls topped with freshly chopped cilantro-YUM!!!
Enjoy
